If youre worried about waxed lemons or limes just pou a kettle of boiling water over them. Wax is gone.Yes I always use philly sour. Kettle souring I'm not a fan of doing really.
I wanted to use lime zest, but didn't fancy the waxed ones in the supermarket without having to make a special trip to Waitrose for the fancy ones. I ended up using a litre of lime juice / puree instead. Of course that posed another problem as I thought it might take the PH down too far, so I mashed a bit higher. It finished just a tad too sweet I think.
The husband says he's with you on the bon bon sweet thing. I'm glad you got some lime flavour as I have to look for it now, as it's worn off just a tad.
To me I get huge pear. The husband says he gets kiwi.
