Rochefort 10 next. I had a few of these on holidays. Another cracker of a beer. This has more carbonation that helps cut the sweetness and makes the beer very lighter.
Hard to say which I think is the better of the two. I am leaning towards westy 12, it's more complex with a better aroma. Very hard to split them

This is @Nottsbeer trappist. Not a style I'm that clued up about. I had a look at the bjcp guidelines but couldnt see what it might fit into so I'll have to go it alone.

First off, lovely stone fruit aroma, well carbed which seems to fit the beer well, a thick head which dissipates fast. Dark copper colour, slight haze. Flavour, at first I found it a bit too phenolic but as my tongue adjusted and got used to it the rest of the flavours made an appearance. Slightly fruity, some sweetness. Dry finish and I'd say a medium/light mouthfeel.

As I say not a style I'm familiar with but I've enjoyed it! Thanks for sharing!

Very special beer tonight, Westvleteren 12. This was gifted to me by @Pennine. It's stamped 29.10.17

Dark ruby red, good carbonation, light head that fades
The aroma is intense, dark stone fruit, sweet dark sugar. Really nice
Tastes very smooth with no alcohol burn, again sweet dark fruit, really complex. I need to slow down and enjoy this

What a beer, it's very fitting because it's monsoon season over here. I was going to do a side by side comparison with Rochefort 10, But decided to enjoy both on their own.

Your welcome, they say st Bernard's abt 12 and westy 12 is a very similar recipe and yeast. Rochefort always tasted different to mea. I haven't had a st Bernardus one in a while though.

Glad you enjoyed it! That's almost 5 years old! Or maybe 6? I can't remember if it's a bottle date or a year after.

@Pennine That does look good. Next pilsner I do I'm adding a bit of oak to the ferment as I understand they still ferment or serve some Pilsner at Urquell from the oak.
Interesting idea, I am not sure the casks PU uses impart any flavour. But its definitely worth a try.
 
Sneak preview of my session IPA which has been on gas for almost 2 weeks now. Grain bill as before, same hops but spread out through the schedule a bit more. Smells and tastes the business, just needs a bit more conditioning time to sort out clarity and head retention.
