Hiya guys,
As the title says, looking to create a Delirium red type beer specifically for my wife. I don’t mind a little of it myself but she loves the stuff. She’s nearly finished her keg of Vanilla cream ale so looking to get started on this batch asap.
Looking at starting with this recipe simply as it’s the only recipe which I can find for creating anything like Delirium.

Looking to swap the German Acidulated malt for citric acid.
Does anyone have any ball park figures for how much citric avoid could replace 0.25lbs of the Acidulated malt? Or what sort of PH we are looking to create in this beer?
Planning to reduce the coriander to 0.4oz and double the fresh cherries to 2lbs.
Any general advice for creating this clone would be most appreciated!
