elderberry wine, and blackberry wine all very mature..... they have been in the demijohns for nearly 2 years now (racked every few months) i have no excuse apart form the fact im lazy.. ok, i have another excuse,. i live in a bus, so water is an issue at the best of times so all that sterilising and washing of bottles is a nightmare. i have done it before with parsnip wine and elderflower, and also oakleaf (all were great success) but it was hard work, so ive kept these latest wines in the demijohns... last time i raided the elderberry for a glass.. it was superb :drunk: i like to make wines out of the ingrediants nature provides from the areas in which i find myself lving (which varies alot  )
i made hawthorn berry wine about 5 years ago and it was dreadful. probably the best vinegar i ever made tho
