what wines & beers have you got maturing

Realised last night that I don't have any wine fermenting (can't really count the experimental coffee one as that's intended to reach sillyABV).
So I did a quick stock check
Drink:fermenting/aging-or-conditioning/ready
Cider:16/16/20 (pints)
Perry:0/0/6 (pints)
Ale:0/16/1 (pints) [-/sorghum/millet]
Mead:4.5/0/3.5 (litres)
Wine:0/6/73 (bottles) All sorts: plum, mixed berries, parsnip, carrot...
Should last until I've made some more wine. Phew.

30L Ginger beer
Approx 90 bottles various WOW-type wines

Ready to bottle:
5L Açai berry tea wine
5L Red edition WOW

5L Easy White no1
5L Turkish Apple tea wine

Ready to rack:
10L Easy white No1
10L Multifruit red WOW-type

Brewing:
23L Woodfordes Wherry
23L St Peters Ruby Red Ale
5L Tahiti tea wine
5L Mara de Cuja tea wine
5L Strawberry and cherry tea wine
5L Blackcurrant WOW-type
10L Sugar water

Not bad considering I've been brewing for approx 6 weeks :whistle:

It would appear it's time to get my Bud Lime kit in again :D

Just started 2 gallons of ground coffee wine :thumb:
and i have a barrel of st peter's ruby red ale maturing and a barrel of tom caxton bitter ready for drinking next weekend :D :cheers:

Fermenting:
23L Coopers European Lager
1 Gallon Hoegaarden Clone
23L Raspberry Turbo Cider
 
Just started 1 gallon of Elderberry & plum. :thumb:

ingredients
1lt-red grape juice.
1kg-elderberries.
1kg-plums.
800g-sugar.
1tsp-pectic enzyme.
1tsp-youngs super wine yeast compound.
2 or 3tbs-glycerine(optional)
water.
Method: wash the berrys & plums,then add to a pan with water and bring to a boil and then simmer for 15 mins,then strain and press the fruit pulp through fine muslin,and leave to cool,then dissolve half the sugar in a pan with a pint of water and leave to cool,then add to the DJ with the grape juice and berry & plum juice, pectic enzyme and wine yeast compound,fit the airlock and ferment for a week then make some sugar syrup with the rest of the sugar,leave to cool then add to the DJ,top the DJ up to the neck with cold tap water,fit the airlock and fully ferment out.
Note: when fermenting as stopped rack and leave to mature for at least 12 months. :hmm:
I some times add 2 or 3 tbs of glycerine per gallon. :D

55L of Traquair House Clone 8.9% still maturing
30L of Old Jake BArley Wine
30L of Odd Job Pale 7.5%
30L of Effin OAtmeal Stout
60L of Turbo Cider undergoing MLF
30L of Turbo Cider bottled
50L of Beaverdale Cab Sauv to be bottled
60L of WOW

And I have still got about 300 empty beer bottles to fill

Oh also got 8L of cider vinegar and about 20L of stout vinegar.
 
I was on a farm in nottinghamshire and picked these elderberries, where i live they are not ripe at the mo.
Started two gallons of elderberry wine today :thumb: :D

Ummmm to many wine 1 G rose,cherry,spiced mead, braggot, pygment, blackberry mead, 25 yo cherry sherry (i got of my neighbour who let the air lock dry for 25 years looks and tastes like croft sherry) 5 G mead, 1 bottle of brown ale, 5 bottles of another brown ale, 1 cask of brown ale, 1 fv of stout and 2 G of oud bruin (sour beer) so not alot. Oh and 5 gallons giner beer in pressure barrel.
 
for the first time i have started a BETTER BREW CZECH PILSNER 2.1Kg kit :D
I have just read the info on the packet and found out it takes 14 days for the fermentation to
finish :eek:
Mind you at only £12.39 per kit,i do not mind waiting for the slow acting yeast :hat: to better brew for a cheap 2.1kg kit. :thumb:
 
For only brewing a month I've got quite a healthy stash growing.

I've got 1 DJ of each:
Solomon Grundy peach wine - to be bottled next week
Solomon Grundy strawberry wine - to be bottled next week
WOW orange wine - to be bottled next week
WOW apple and mango wine - clearing
Ribena wine - fermenting
Strawberry Ribena wine - fermenting
Cherry wine - fermenting
Raspberry wine - fermenting

Can't even begin to describe how happy I was when I found this forum!

Next week when I get stone spare DJs after putting 3 wines into bottles, I'm planning a pineapple WOW, possibly blueberry wine if I can fine the juice and maybe a toffee apple turbo cider or red wine. Still undecided yet though
 
My stash is rather small compared to others, but it's managable!

In the demi's I've got mead, pear cider, random cider that's meant to have pomegranate in it but it tastes pretty rank as yet, and raspberryade. The bottles are the 40pt Finlandia cider kit I bottled yesterday, they'll sit there for a week or so then go out to the shed with the rest of the stash.

Wildbrew, is the 5Alive wine nice? The juice on offer in a local shop and you've given me the inspiration to try it! Also, are you supplying larger to your entire village? ;) :mrgreen:
