I have only used waimea a couple years ago, it's was very marmaldy. I used in an amber ale and was not very happy with it. It would probably go better in a Hazy I think?I have 100g of WAI-ITI and 100g of WAIMEA, any suggestions of what to brew with them. I have not used either of them before
I might pair the wai-iti in a pale ale along with a small amount of cascade and Amarillo. I kegged 21 litres of 5 Points Best Bitter.
Currently my favourite bitter. Use only Fuggles hops.That's another one I tried before and didn't find very successful, that I need to re-visit! Again I hope that improved technique will lead to better results in future!

Came out of the fermenter slightly hazy (I can't cold crash). Tasted fanatic. 1.015, so slightly higher than yours. But I only used one pack of yeast.It should come out of the fermenter already clear and very drinkable. Two weeks later it’s pretty much on the money.
