Ginger Ale/Ginger Beer/Ginger Wine

Not sure. Is this ale or beer? Or is it wine? At 10.3% it is drinkable, but only in small quantities. No head. No real fizz. Every now and again I experiment. I brew all my experments in plastic - they are easy to distinguish in the gloom of my conditioning cupboard. Some experiments work. Some don't. This is not a brew I'd repeat.

On the left, a 20L batch of Ritchies' Bitter. Already siphoned, left to settle overnight before bottling tomorrow. Added half a pot of honey in addition to the LME at the start of the brew. Once properly conditioned, the bitter finish is swept away by honey and then the bitter notes sweep back in. Not to everyone's taste, but I love it.
 
Dinner at a cafe just a 2 minute walk from the hotel for something simple tonight. Thought I’d try this Cherry Choufee… 😳 only realised it was 8% when it arrived 🤪. Super potent concentrated cherry bomb, crikey. That’s going on the ‘interesting’ list but I don’t think I’ll be trying to copy it.
