Birthday beer - a 2014 Fuller's Imperial Stout. A big big complex beer.

Tonight my Foreign Extra Stout, thinking now that the wort I soured got the wrong bug in it. Tasting rather sweet, still very nice though, and I saved $15 not having to buy the sour yeast strain.

It’s a bit quiet in here! Perhaps I’ll liven up the proceedings a little with @Hazelwood Brewery saison. Perhaps you could let me in on the joke of why you always call it Saison! lol

Have to confess I’ve no idea when this is ready to drink (cos I forgot to ask) but I assume it’s ready now as it’s reasonably clear, and as expected it tastes good!

The colour of the brew is #goals

Lovely smooth Belgian beer with just the right amount of aroma and esters. Not overpowering and overly funky, which we are not keen on.

I enjoyed your tripel HB but I definitely prefer this! Is it a different yeast?

The bitterness is just right and I think it’s nicely balanced.

Not very good at reviews so not sure what else to say, but nothing is disappointing from Mr HB. Thanks again!

The expression came from me saying (about 18 months ago) that the word saison sounds more like an exclamation than a beer and makes me want to thrust my beer in the air and shout Saison!!

It is ready now so you’re fine to drink it right away (too late now! ).

It is a different yeast, yes. This one uses Belle Saison yeast.

It is a bit low on carbonation in your case and others I bottled, my kegged version is more effervescent.

Makes sense now, thank you! I love that yeast, as husband has used it before (in his gusher beer, which you may remember lol).

Trying this Mosaic, Citra and Cascade APA I bottled fifteen days ago, also put 10L in a minikeg.
Great hop aromas, citrus and resiny pine with perfect bitterness for me.

On the Malt Miller Doom Bar clone tonight it's really improved being sat in the pressure barrel for a few months.

I’m starting with a guest beer tonight and appropriately it’s a 5.4% Winter Warmer from @chrisb8

The beer is softly carbonated but is just right for this beer, dark brown with claret highlights, and crystal clear when held to the light. The spice aroma is absolutely wonderful - like baking ginger bread and mince pies. The flavour is similarly beautiful, the spices are neither subtle nor overwhelming and, for me at least, strike a perfect balance. I’d go so far as to say this is the best winter spiced ale I’ve ever had.

Feels like a merry go round of wine and big meals lately so after a good walk on the beach with the dog back to a neipa from lacada “blue pool” lovely thick creamy mouthfeel and very tasty.
