The boys up at the Wincle brewery have their own borehole so have a consistant water source and ph levels.

I do remember reading up about the water used in Taunton from a borehole that Starkey Knight and Ford used which was a very hard water and was ideal for their beers, sadly both the company and brewery are long gone, along with most of their recipes.

My local HBS does have the usual gypsum salts etc, to burtonise the water.
I think I will stick to my tap water for now but I might tweak it depending on what beer styles i do.
