I asked my mate who makes lots of great cider enjoyed by all who try it....... he says he uses powdered sucrose as his sweetener as it wont ferment, he uses 1 gram in 50 litres of cider, but experiment to taste

could take 4 to 5 months before its at max fizz.
will get better tasting for about 6 months after bottling and then it should be stable for a least a couple of years.
