I suppose the question is that age old one.

It's easy to say you shouldn't use x
But it's harder to say you should use y

What is y

Sorry to rabbit on

Rabbit all you like mate that's what the place is here for.

I found that over the first few weeks i was back sweetening my wine as i had got used to the overly sweet cheap supermarket wines we used to drink, i managed to cut it down over time and now enjoy a much drier wine, maybe you could try this and see if you can get used to a less sweet cider.

Hi, I have put a batch of the original raspberry on at the weekend. It seems to have slowed down a bit now so I'm thinking it may have nearly fermented out (haven't taken a hydrometer reading yet though). If it has is it necessary to leave it until day 21 to bottle? Would that be beneficial or can it be bottled once fermented out?

Cheers

I bottle as soon as finished I'm drinking in 21 days or less

Cheers Chippy but it's not for sweetness in the cider it's the sharp taste that it stops. I prefer dry.

My first TC done! :D

Half of it primed with soft brown sugar, the other half with raspberry syrup.

Great stuff.
I just opened a bottle of my first batch of tc. See pic. The sharpness is fading in bottle. Still there but lesser.
Could it just be time and maybe 1/4 tsp canderel.

yeah lookin good, is that 21 days or have you managed to leave that one longer?

I'm sure I read that cider needs maturing at least a month after finishing, but preferably three to get to that sweet spot
