There aren't many breweries in Thailand due to legal blocks on brewing in the country. There are some "craft" breweries, but they are largely owned by the big breweries.
Mardi Craft was a brewery that was fairly widely available. If you go in some of the specialist beer bars and get talking, then you'll likely be offered some beer brewed by locals. They keep it quiet though.
There is also a local chain in Bangkok called Chitbeer that bypasses the Draconian beer laws.
I've definitely made some chitbeer in my time.
You'll also find some cool variations on the Big 3 when you're there.
Watch out for the dodgy stuff
