Scum - To remove or not to remove?

Hi All,

Day 3 in the bucket for my Fruit Tea Wine. All going nicely and smells awesome.

A thick scummy foam has developed and was wondering; to take it off before siphoning into DJ or to clear n area and poke the tube in and leave it be?

Ant one got any ideas?
 
Its says more about me than I care to admit but it looks quiet tasty.

A bit like a strawberry cream slidge and the smells quiet enticing
 
If it's only day three then it's likely fermentation isn't over yet. By the end of fermentation most of the scum should have dropped to the bottom - I know, it's alarming to see so much gross looking stuff sitting on the top of your brew but it give it another week or so and it should settle before you do any siphoning. It might even take a couple of weeks for wine, but if there's still a lot of stuff on the top now LEAVE IT ALONE! :lol: ;)
