Mine are 8 and 6 and although they think beer is gross and smelly they're fascinated by the process and the science behind it all, and they understand the concept of fermentation and bottle conditioning well. I'll make brewers of them yet...
 
With 3 kids I tend to brew when the opportunity arises.

Sometimes I start the mash before bedtime so I can finish once I'm done getting them asleep... sometimes the wife puts them to bed (unusual blessing).

If I am late getting started I might mash and sparge at night then boil first thing in the morning. Have done overnight mash but prefer this way as it breaks time and work up (you can have the mash tun clean before bedtime too).
 
I brew saturdays usually. My kids are grown up, but my son turns up, which is helpful when I need help to lift my 50 litre pot; but he then drinks all my beer:doh:
