Why is milestone raspberry wheat beer too fizzy?

My raspberry Milestone has a very foamy head, compared to brewferm raspberry. I need two glasses to pour a single 450ml bottle and as you can see the head can be over 2inches high on the first glass. https://plus.google.com/u/0/117431493889936242297/posts/JypK5g7mS8j

Question:What did i do wrong?
in March the beer spent 10days in the fermenter and I bottled at 1012fg (it had not changed for 3 days). I added 3g of white sugar per bottle.
Should I have waited a few more days until 1010 or used less sugar?

what are your thoughts

Steve, i made the Brewferm raspberry and your right it was fine, not sure what's happened there mate,have you tried really chilling it before pouring or rinsing the glass out first as a wet glass can sometimes kill the head ?
 
I reckon you bottled it too early, I never bottle earlier than day 14 and quite often leave it 21 or even 28 days. Typically, I syphon it off the trub around day 14 into a secondary FV and leave it another 5-7 days in the cool before bottling.
 
Just watched your video mate, looks nice and similar to the Brewferm I did.
I don't think you have a problem at all ? Chill your glass and don't pour straight until you absolutely need to.
It's better than being under carbed :party:
 
If it's meant to be a Belgian style beer then that head looks perfect.

You're not meant to fit a 450ml bottle into one of those glasses, they're designed for a 330ml bottle and a massive head so go for a pint glass if you want to fit that in. A Duvel will usually pour exactly like yours.
 
Thanks for your kind words. It smells and tastes great which is more important.
I think I'll try leavining it for longer than 14 days next time.( although milestone instructions suggested I should have bottled after six day. I also seam to remember a few people complaining about their instructions.)
Ill diffinately make it again.
 
Re-instructions: they're always over-ambitious, many of them say the beer will be ready in 7-14 days. Rule-of-thumb I apply is 2 weeks minimum, have had them finish a little early, but there's a blanket of CO2 on top of the beer so it won't hurt leaving it a bit longer.:cheers:

I don't agree that it's better to bottle early and have a bit of fizz, hard to judge and if you're not careful you'll end up with exploding bottles. :shock:

You don't bottle early to get fizz, you add the correct amount of priming sugar to get the vols required, a wheat beer true to style can be up to just over 4 volumes which is about the highest carbonation listed. As his hydrometer reading was the same over three days and isn't actually that high I think he bottled it at the right time.
You're right in that instructions are always ambitious however wheat beers are always ready faster than other styles due to the grain used.
 
I had a thought...
How do you sterilise your bottles. I put them in the dishwasher. Perhaps this can leave food stuff inside the bottle. What do you do?
 
On getting them I hand wash and de label, then before use I put them in the dishwasher, then into videne solution for30 seconds and onto the bottle drainer.
 
Putting them in the dishwasher cleans them, you need to clean and sterilise not clean or sterilise to make sure they're good enough for your beer.
 
Hi Steve, I have a dishwasher and I use it to periodically clean bottles that are in storage. But I've never used it for sterilising. Always worry that it'll miss a little bit of smeg or the rinsing liquid will leave residue, so I individually clean and sterilise with youngs stuff. So do you do it without the cleaning tablet and let the rinsing liquid run out.

I Didnor use the sterilising liquid.. I was stavking bottle upside down in the dishwasher on anormsl wash.. Then boiling water in the kettle and rising the bottles to remove any salt or dishwasher tablet. Leaving the warm bottles to dry out in the conseratory.
