Brewed a Belgian Dubbel yesterday. Last attempt used Special X instead of Special B and did not work well. Let´s check if it get better.
 
Brewed on Saturday: 5Gal of yet another "made-up" IPA design, this time an experiment using NZ Pacific Gem as flavour & aroma hops (I've read contradictory descriptions for use), with a 7kg grain bill, primarily Maris Otter, but including a bit of wheat & carapils, and Pacific Gem, Simcoe & Amarillo hops, 15g PG first wort, 20g PG steeped @ 80C for 15mins, and a drop of 60g PG & 50g Simcoe being DDH'd at high krausen (<1.060) & a 2nd drop of 60g PG & 50g @ 4 days (<1.025), with fermentation starting at 17C rising to a final 22C finishing temp.

Didn't see a "What did you bottle?" so here I am.
I bottled a Belgian Tripel. Was astounded to get the FG down to 1.012 with the dry yeast (Safale T-58 and MJ M-41). I thought something was wrong when the hydrometer almost sunk out of sight since I'm only used to seeing OGs lately (five batches in a row) where the hydrometer's been sitting up high like a sail boat.
The OG on this Tripel was up there at 1.096. Happy all around. Funny that hitting an FG can make one's day.
 
A California common, 6 kg of grain, 110 grams of hops, 21 litres of crystal clear wort into fermeter, pitched Crossmyloof yeast.

Brewed my Festive Ale this morning so it has about 3 months to be ready for the time of year I really don't want to think about yet.

Why do I always take a taste of the hydrometer sample and then regret it?? Perhaps next time I will learn...
 
Currently got 24 litres of pseudolambic in the kettle:

60% Pilsner, 28.9% Wheat, 6.7% Spelt flakes, 4.4% flaked oats

Mashed at 72C.

Hopped with 50g aged hops (approx 4 years old) - assumed IBU after 2 hour boil of ~7IBU.

Once the boil is finished, I'll cover with muslin cloth and leave in the garden shed to cool overnight. In the morning, I'll pour it into a glass carboy and add some Boon Geuze dregs and some (being about 1 year in the fridge, likely dead) dregs from my previous p-lambic megablend.

Then it's time to cross fingers and pray to the Pajottenland

Edit: image of hot wort overnighting outside. Hopefully will gather some bugs

Hi guys,

My first post but been brewing for a few years now. Just thought I'd post a quick review on a kit I've recently done (Wilko feeling hoppy IPA).

Brewed with 1.5KG light DME added a hop tea made from the 10g amarillo and 50g citra and pitched a wilko ale yeast not the little pack that came with the kit. OG 1.048 would have liked it a little higher but happy enough.

Day three added 25g citra dry hop, SG 1.010 (went off like a rocket). Gave it a swirl to encourage the yeast and left for a further 4 days. FG 1.003 ABV 5.9% not bad considering the OG.

Pungent hop aroma when transferring to keg, primed with 200g light DME dissolved in a hop tea made from another 25g of citra. Left a for a week then move to a garage to chill. I made up 4 bottles to put in the fridge to taste early. After a week in the fridge cracked one open and drank all 4 within a couple of hours. Still a strong hoppy aroma and flavour, enough malt to stop it from been sour and a dry crisp finish.

Great beer from a kit and would definitely recommend it.
 
Just finished brewing an Earl grey pale. Consisting of Pale ale malt, Vienna, wheat malt and flaked oats. Hopped with magnum, citra and mosaic with early grey tea added in whirlpool. Going to dry hop with more mosaic and early grey.
 
Just started all grain brewing this year. Having an all grain brew day this weekend and my lovely sister has requested something vaguely in the area of a Wainwright but doesn't need to be spot on so looking at 4.7% abv instead of the 4.1.She will trade for the beer apple juice from her orchard for cider so a worthy quest ! Batch size of around 23l .I have at hand Hops- EKG, Styrian Goldings, Northdown and Challenger, ( + American leftovers also Citra Cascade but thinking of staying English). Maris Otter enough for 2 batches, left over Crystal 60,Caramalt, Pale Crystal Malt, Carapils.
Just done, and now drinking, Graham Wheelers all grain Exmoor Gold with about 200g Caramalt added and it's gorgeous- clear as a bell, subtle Styrian fruit ,wonderful when well chilled for this warm weather. So any recipe thoughts for a delicious All Grain English Golden Pale Ale around 4.7%?

Thinking of trying this mod on the Exmoor Gold:

4.1 kg Maris Otter 82%
.5kg Vienna 10% (because I want to try this for the first time)
.4kg Thomas Fawcett Pale Crystal 8%

47g Challenger 60min
16g East Kent Goldings 10 min
8g Styrian Goldings Flameout

4.7% ABV IBU around 39

Wondered what more experienced brewers may think particularly with the Vienna addition.

Tried my first 25 L partial extract brew today in my new Klarstein boiler, 1.5kg of coopers pale malt extract, 1.5kg of maris otter malt, 100 gms of hops air dried in sun for 2 days. These are an unknown variety rescued from an abandoned farm & now growing in my garden. Finished with 15 grams of freshly picked hops at shut of time for ten minutes.
Didnt fill the Klarstein boiler right up as its apparent the temperature hunts up & down & it would be a brave man who filled it up to the level line in case it boiled over, so i added 5 litres of water & extract to the fv once it was cooled. Homemade copper pipe cooler worked really well. Got the 10mm pipe from asap supplies & lo it came ready coiled at the right dimensions to fit the klarstein perfectly just bent both ends up to top & pvc pipe affixed.
Well its now all in the fermenter with sarfale 04 yeast, It smells like wort should & even tastes like it too! The hops being an unknown quantity makes it interesting but they were proper oily & smelt good so heres hoping!

Hi Keith I have a Klarstein fullhorn, you can fill it to line and boil no prob I just knock it down to the 1600w setting once it hits boiling, the full mark is 27L not 30L acheers.

A late start after a late night ..
I'm just mashing a bit if a user upper black IPA..
Maris otter,black Prinz,a bit of choc,barley,oats,carapils and crystal 60.
Hops...magnum,Columbus and centennial...should be just over 5% with around 50ibu.

Do you regret it because you would like more or that the sample isn't very good yet?
