Update on my variation of this brew

Simply stout
1kg brewing sugar
500g Demerara
1kg damsens
1kg blackberry

De stoned the damsens which wasn't too bad.
Parsterised the fruit.
Added everything in the brew as per normal.

This is when things went a bit crazy. Had it in the kitchen, but noticed it was hissing and the top looked under pressure. Checked the airlock and it was jammed with fruit. Lifted the lid, and it seems to have turned into a Frankenstein brew. Going absolutely mad.

Moved it the garage surrounded by towels.

Airlock jammed during the night and blew the lid off. Foamed over the side a bit, but could have been worse.

Left it with the lid loosely on, and 24 hours later it's calmed down a bit.

Cleaned it up and sealed the lid, replaced airlock, and it's bubbling like crazy but seems to be ok now.

Initial taste seems interesting. Quite strong taste. I'll check before bottling, but if it's too strong I can still add a couple of litres of water before bottling.
