So after my last posting here about an accidental light Pilsner like result, I thought I would have a stab at a Budvar-like SMASH brew with the ingredients I had in store for the third use of my Hopcat.
Maris Otter Pale malt
A little crushed mixed grains (plain Muesli base!) for head,
Invert sugar to raise from OG1039 to 1042 to boost intended alcohol to 5% and thin out a little,
Saaz hops (70 min. bittering boil, 15 min. flavour boil and 30 min at 75c for aroma as a whirlpool with some plumbing modifications),
Nottingham yeast saved from my last English bitter brew - this finished at SG1004.
Fermentation started pretty much straight away at 21c overnight.
This was 3 days ago, fermentation pretty much over now.
Can't wait to see how it turns out.
 
Two cases of AZ Red Rock ESB in the bottle! (4.5abv)
Hopefully it will clear a bit more, but the uncarbed illustrates it will be a good'un.
First batch for this kitchen.

Thanks, although it's changed color, that was a gift-to-self when I retired from the USNavy in '97. Plus it helps with the 'nut-job' persona.

Oh, and the kitchen is much more space than the missus and I have had in our 37 yrs together. No 'new babies' in the future for this house, but definitely keeping an eye on the beer rustlers.
 
Oops! That's not the normal place that gets placed when I come in, but I was so intent on getting the bottling done....

Ah well, now folks can make all their incorrect assumptions about me as a religious-nut, gun-totin' yank. :cool:
Doesn't the saying go something like, "You've gotta have guns to stop the authorities taking your guns away"? 😜
But seriously, it's a different environment you live in, and unfortunately nutters do have guns and so you do need to have them also for your own protection.
And so the cycle repeats.

I poured a batch of stout away today. OK, it was *only* the small batch parsnip, but I thought I'd made enough iterations of it now not to be surprised, but it was way too bitter, over-hopped. I think I must have gone OTT on dry-hopping, although I didn't think I'd done anything different to previous batches. The only difference was I used a different yeast this time. Would a change in yeast really bring forward hop taste to any significant effect? I wouldn't have thought so, but I'm a bit stumped for another explanation. I have another batch bottled just a few days ago, and now I wonder if that will be the same.

In more positive news, a batch of Irish stout bottled, and the Gumballhead racked off into demi-johns.
 
First brew since July yesterday. Latest iteration of Vienna APA. Have dropped the Vienna down to less than 20%, kept the Bry-97 and mixed up the hops. Decided on Magnum to bitter and Falconers Flight for aroma and dry. Intrigued to see if an 'off the shelf' hop blend works better than my own recipes! Bubbling away nicely in the fridge now.
