Decided to try and brew an experimental cream ale, here's the recipe

22L of a Jail ale clone

4200g Pale planet malt
200g Torrefied wheat
350g Crystal 45L
50g Chocolate malt
35g Challenger @60m
25g Fuggles 15m hopstand @ 90C (due to burco tripping out after 45m boil.)
Wilco Gervin yeast
OG 1051 BHE 74%.

American Amber

4.5kg Minch malt
500g light Munich
400g dark crystal
200g Cara Munich 2

20g centennial@30mins
30g centennial & 20g bru-1 @flameout

Dry hop 50g centennial & 30g bru-1

Yeast: Pia

Sample cooling, I resisted the urge to add special B. Maybe next time, I planned to add some chocolate malt at mash out for colour but I was happy with the colour already

Well I am doing a slightly modified kit today:

Youngs Harvest Mild Kit (1.5KG)

Mild Malt: 1500g
Dark Crystal: 250g
Chocolate Malt: 50g

Grain was mashed at 67°C for an hour then boiled for 60 minutes, then mixed with the malt extract kit up to 23L. Yeast wise I opted for CML Beoir.

OG: 1.033
FG (expected):1.009
Predicted ABV: 3.2%

Overall things went to plan although the downside of using grain is of course that efficiency may not be as expected but still only a couple of points out and I am primarily going for a session Mild so I’m not overly bothered.

60% chevalier
33% barke pils
7% light crystal

Us05 , forgot to order live yeast last week. Wanted to use wlp007
Step mash for attenuation

Admiral and eldorado hops to about 50ibu. Got good clarity prior to transferring it to the fermentor

I’m off work today to recover from a weekend away (it was a fairly tame trip to Glasgow to watch the Strongman competition, a couple of drinks afterwards and an overnight stay) so it’s my first brew day for a while, and prefect timing because I emptied my keg of wit on Friday night.

I’ve gone for an “old school” APA in homage to SNPA and Anchor Liberty.

5kg MO
250g Crystal

20g cascade 60min
20g cascade 30mins
20g cascade 20mins
20g cascade 10mins
20g cascade flameout

I don’t have any Liberty Bell or any of the main Chico strains so I’ve gone for CML Pia.

It’s also the second brew using my new GF grain mill. Someone on here (can’t remember who) told me to try changing the crush setting to 7 so I’ll see what difference it makes to my efficiency.

Just took a hydrometer reading on mine and @Hoppopotamus attempt at a Quad/BDS. 1.020, roughly terminal gravity according to brewfather, not bad in 3 weeks! Puts the current ABV at 15.4%
