By chance I’m drinking the same (well a sample from the fermentor, as I was kegging It). A combination of slightly higher than expected efficiency and some what higher attenuation than expected it comes in at a somewhat boozy 6.3% instead of the target 5.3% but even young and un carbonated it tastes pretty good so looking forward to trying it in about four weeks.
Mine came in at 5.7 i put it down to the yeast
 
On the bright side this is nice! I think I’m giving up brewing I suck lol

Don't give up Tess, i lost my mojo last year for a 4 months, i had loads of grain and hops i just couldn't be arsed brewing got up one morning and rattled 4 brews off in 5 days, take a short break then back at it 😍
 
This is my over-active Kolsch. To be on the safe side it’s not going in one of those cheap fermenters. I’m gonna baby it along lol. This was today. Told you it’s been a bad day. Had a Kolsch shower 😂

Tonight we’re trying Jim’s latest beer. Not quite finished conditioning yet though. It’s a low carb citra and centennial IPA.

Finished at 1.003 so it’s very dry and very bitter. But really fruity and nice. Bit of a funny smell though at the minute. Hopefully it conditions out.

Smells like feet 🦶 but tastes nice! Couple of photos - one of them is Rod style so you can see the true colour. 😬

What yeast did he use to get it that low
 
Just checked. It was US05. I guess you suspect an infection. I've been thinking similar. Will see if it goes away in 2 weeks.

Edit: oh, just remembered. He did a high fermentability mash as well.
It is rather low but you never know, it could be ok. Not sure what a high fermentability mash is.
 
A stepped mash to maximise fermentability, hence trying to make it as low carb as possible as he's diabetic. Either it worked really well or we have bugs lol

Mind you, mine finished at 1.008 so there's nothing wrong with that - I just oxidised the bleeder.
