Just used that yeast in a Chevallier smash how did it preform ? Seemed to take off very quickly.I checked the malts and hops on the website but not the quantities so it’s my version. For yeast I used CML Midland.

My first thought was that they were sours from Enniskillen, and the 2 'S's were tasteful depictions of the upper and lower loughs. After that butcher's comment I'm glad I kept quiet .I didn’t post last night because I spent the evening (along with 10 other people) on a video-call with the owner/brewer of Wilderness Brewery. They are based in Wales and mostly focus on mixed-fermentation and barrel-aged beers. We tasted and discussed these four beers last night.

Nice beers. For me the bottled biere de garde and the “so emotional” saison were the stars. The brewer, James, publishes his recipes but unless you’re going to buy a wine barrel and age your saison for a year or two, maybe just buy a can.
