Encouraged by the Summer Breeze and Czech Pilsner I’ve poured a pint of my best bitter. It’s very drinkable but not ready yet. I got cocky!

I did I stole the idea from a surly beer called Todd the Axeman this is probably my fourth edition and the largest hop load I have used in it. It's getting closer to what I remember as it's aging. Maybe a bit too much mosaic as the darkness comes through. I like it though almost as much as the original. It's surprising how much malt character you get from heavy loads of golden promise.

How long do you suggest I hang onto those beers? I don't want to tuck in before they're at their best.

The Summer Breeze just needs a couple of days to settle a little, the Pilsner is good to go as soon as it’s cleared, the bitter might need a couple of weeks.

They’ll all benefit from a bit longer but I can always send you another set in a month - tuck in!

Is that 400g of hops?? I'm fed up with hop fade in my IPAs so I don't know if I could bring myself to use that much

I am just sipping a pint (500ml actually) of FST London Pride. I bought a case of 12 bottles for £14 from my local Sainsburys yesterday as I thought that was a reasonably good deal. Just £1.16666 each!!

24 different ones. Some special Christmas ones in there somewhere too. I think it was about £45 so not bad really.

This Guinness Foreign Extra Stout a stronger, hoppier version brewed for export, was originally West India Porter.
Fruity sweet, dark treacle taste and more bitter than regular Guinness.
Quite pokey at 7.5% so one's enough for me, nice to savour slowly.

I love west indies porter. I haven't for some reason tried the export stout. Sounds right up my street
