I have had a sample of my tapwater analysed for reccomended additions - this is the recommendation for Ales and Bitters:

AMS into all liquor - 31Ml per 25L of Liquor
DWB into the mash - 13g per 25L of mash

I have the ingredients - just wondering what constitutes "all liquor"?

Also, is "the Mash" the initial boil, or sparge as well?

All liquor is the total amount of water going into the mash and the sparge. DWB into the mash means you add it to the mash liquor (water) only. The amounts are given per 25L so if you use 15 litres in the mash then it's only 15/25 of 31ml of AMS. Same with the sparge.
