Tonyhibbet posted that it will last longer than the month, I am spineless so decided to not buy it again and prefer KK as it has a long use bye date.
 
My last WOW I just grabbed the sachet of finings from the shelf in Wilko's and it was crystal clear within 48 hours. SWMBO couldn't believe I'd created so thing that looked so presentable. Needless to say we are down to our last bottle...

As Chippy_tea says, after a couple of glasses eyelids start to sucumb to gravity. Against my natural instincts I might try to go for something south of 12% next time. :lol:

Thanks, what's that in suger grames please for about SG of 1100
You need to have a total of around 1190g of sugar for an SG of 1100, this should give a final strength of about 13.4% if you ferment to 1.000, of course if you ferment too lower FG then it will be stronger, 0.990 is about 15%. Get it even lower and you fall over.
As Cheapbrew says add the sugar gradually, there are high alcohol yeasts available.

I have started a Watermelon, Raspberry and Apple with RGJ WOW.
Hopefully it will come out nice. Although I think I put too much sugar in.

Total sugar content was:
Red grape juice = 161g
Watermelon, Raspberry and Apple = 84g
Plus added sugar = 760g
Therefore the total was 1005g. The Hydrometer reading was 1.092, which I guess is around 13%

Although the missus like a medium wine, that is maybe not so strong, can you stop these early successfully?

Thanks, just didn't want to water down the flavour.
If I let it ferment completely and then Rack off stabilise and clear. I presume I could then add sugar to sweeten to taste as it shouldn't start fermenting again. Unlike when I've made TC in the past.
 
Yes back sweeten if needed after it has been stabilised, water it down a little before fermentation has finished and you wont really lose any flavour.
 
Is it best to back sweeten after it has fully finished fermenting or finish early to retain sweetness? Obviously finishing early will lower the ABV too. But not sure the best thing to do.

I tested back sweetening methods and found that finishing early to keep it sweet wasn't as nice as letting it finish lower and then back sweetening, I now aim for 1075-1080 ish OG and let it go until it's down to one bubble every couple of mins then stabilise and back sweeten if needed.
This seems to please those who prefer a drier wine and also those who prefer sweeter wine, usual comments are "I prefer drier but that is very nice", or "I prefer sweeter but that is very nice"
 
Perfect thanks. My OG was 1.092 with 1005g of sugar in total. I think in future I will be adding less otherwise the missus will be on the floor after two glasses. :)
Not sure how low this will ferment to as I haven't used this yeast before. We'll see.

I just looked back to find your recipe to see what yeast you used and I'm surprised the OG was as high as that with the total sugars only being 1005g but I guess it depends on how much water you added at the start

I would have expected much lower, I find 2L of juice and approx 750 -800g and topped up to the shoulder of the DJ with water ends up around 10.5% - 11% depending on sugar content in juice and final topping up.
 
I was surprised too. I put it all in the DJ and toped up to the shoulder with water, and then used my Turkey Baster to decant some in to my trial jar for the hydrometer reading. I was expecting 1.080 ish, so was shocked to see 1.092. The only thing I can think of is if the sugar content of the cartons of juice was a lie. :)
 
I don't normally use juice with purée in it as you end up with much more sediment than when you use juices without it but i couldn't resist the ingredients, has anyone else used this juice?

Morrisons red grape and berries juice.


We squeeze 158 juicy red grapes,
3/4 of an apple,
7 1/2 strawberries,
3 raspberries,
30 blackcurrants

The red grape and berries + apple juice wines are down to a bubble every 11 seconds so should be ready to rack early next week, they have not thrown up as much sediment as the RGJ and strawberry puree ones i have made in the past which is a big plus.

Degassed and added finings to two DJ's last night, Mrs Tea had a taste and said they tasted mostly of strawberry, looking forward to trying a few glasses tomorrow night.

My pineapple one is going well, its got a right funky looking krausen, I've been trying to get the daughter to make a picture for me, but not happened so far

Have you tried the previous post with pineapple to make a sauv blanc? Worked out really well. Bottled Friday, it's all gone. Even my mum, gave her a taste test over that and nobilo. She picked the wow.
 
I've not tried that one yet, but I've not had one folks didn't like, I wanted to do a rhubarb, and then the pineapple and next I need to top up stocks of rgj and apple and then maybe I'll give it a go, but I'm thinking of birch sap wine too if I can get it together to go off and do some tapping.

I've got 14 L beer, 2 gallon TC and 1 wow and 3 gallon beer grain wine taking up house space so I cannot push me luck!
