STC1000 settings for Coopers Pilsener?

I have finally hooked up my temperature controller purchased from Cedaronics.... so I am giving it a bit of a test run tonight to see if all works out, but I think I am going to need a bit of advice if possible.



To calibrate I have set the unit to 14.5C with a variance of 1.5C, I have a fermenter full of water, which has a separate digital thermometer attached, with the probe end in the water. The dial on my fridge is set to 5 (can be set between 1 and 7) I have not changed the settings for the compressor delay time, or the temperature calibration value... so they are left at 3mins and 0C

With any luck I can check this in a few hours time to see what sort of readings I get from the actual temperature of the water VS the temp on the Temperature controller, I am hoping this will give me some rough figures I can work with when I put an actual brew in. Water temp was at 28C when I stuck it in the fridge, so far the cooling part is working, but I won't know about the heating part for a while. (is a 60W tubular heater )

Once I have done the above, I was looking to get a coopers Pilsener on the go. I have read that the supplied yeast can ferment as low as 13C.... does anyone have any suggestions as to what sort of temp I should ferment at, and maybe what sort of settings I should use on the temp controller? This will be the first time I will be using a the brew fridge, so I don't want to mess it up.

One final thing, when pitching the yeast, should it be done at a higher temp eg 24C and left for a while, then stuck in the brew fridge, or is it fine to pitch low?

I recently amde this kit, and it was also my first attempt at usign proper temp control! I hope that it will be my last kit before i go extract.

I pitched two packs of one of the fermentis yeasts at about 14 degrees i think, and set the temp thing to 11.5 with +/- 0.5

It's since been in the frisge at about 1.5 degrees for a month, and is now ready to bottle. Not tasted it yet though.
 
I shall have a quick check of it today, the digital thermometer I bought on eBay broke within the first few hours.

So got to find the glass one, check the temp is fine, then I am hoping to start the kit before I leave for holiday at 5pm...

I also have to get a few other bits done, but with any luck I can get it started today, then once I get back I can keg it
