might be more by chance than anything else. I've seen videos of slugs crawling over all sorts of 'deterrents' like broken glass, sandpaper etc. They don't care. Same with copper pipe, that is supposed to give them a shock.

We used to have a problem with them getting onto the shed to get atcthe cat food a couple of lines of road salt or table sale soon persuaded them to go elsewhere.

It could just be snake oil. Or it could just not be a black and white situation. I'm sure it/glass acts like a deterrent and will deter a slovenly slug, but not a determined one. Maybe it's been just enough of a deterrent for me, or maybe it's luck 🤷‍♂️
I don't know about slugs but glass is a deadly toxin for flies.

I've repeatedly had slugs make their way into the kitchen over the last year.

I think they were coming in via an air brick, that I've now put some mesh over. We have been keeping kitchen recycling near the point where they come in (with the occasional beer bottle in there), so I wonder if that's been attracting them in.

Since putting the mesh over the air brick and taking the recycling out quickly we've only had one slug appear (and that could have been crawling around behind cupboards before I put mesh over the air brick).
