3.45kg Pale Malt
400g Flaked Barley
200g Crystal 60
80g Chocolate
80g Roasted Barley
14g Magnum (11.1% Alpha) @ 60 Minutes (Boil)
15g East Kent Golding (5.9% Alpha) @ 15 Minutes (Boil)
Single step Infusion at 70°C for 40 Minutes. Boil for 60 Minutes
Fermented at 20°C with Gales yeast
I've made this a couple of times now and it's surprisingly complex.
The key to this beer is firstly to use a characterful liquid English ale yeast. The Gales strain is my house yeast but if your going to use a dry yeast, I'd recommend MJ M36 Liberty Bell. I've not used it myself but I've read like the gales strain ,it's quite fruity. Secondly as it's such a low OG you need to get as much body in as you can, so a short, high mash temp is a must (the F.Barley helps loads too)
I also recommend carbing to 1.5 Volumes of C02
