'I've been told I need to tell people we've taken hold of two new beer yeasts before I get too merry - hic! 'Flushed Nun' - An Abbey Ale yeast and 'The Firm' - a Full Bodied English. After a test brew or two, and enjoying as we speak, I can confirm Friday afternoon's not looking too bad

Once I'm a bit more sober we'll do some kind of giveaway competition too. Probably early next week. Let's hope the weather holds for the weekend and enjoy whatever you're up to. The CML Brew team'

The Firm.... i.e. the Queen... Windsor!!! Yay!!! Been waiting for this for ages. Don't know what Flushed Nun will be. Cant wait to try this, I've always said CML were missing a Windsor / Empire / London type of dry yeast in their line up. Eeeeekkk! Quite excited. If its a decent price, co-pitching with Wilko Notty could be just what I'm after.

I tried Windsor and Nottingham yeasts pitched together. The taste was fine, but the flocculation was weird - large globules of yeast in the beer, even after months in the bottle. No idea why that happened. I re-use yeast routinely and chucked the rest of the yeast after only two brews.
 
Just ordered 5 yeasts for £10 and they are

Clipper
Pia
Flushing Nun
Hell

A bargain. Have used Pia and Hell before but not the others.
 
I’ve recently used their German lager yeast and it’s a lovely strain
 
I’ve got a Pia in the cupboard that I’ve never used before. I was going to use it like US-05/BRY-97 and make an “old school” SNPA/Liberty type APA with it.

I remember getting that in a commercial beer- Freeminer from the Forest of Dean. Great clumps of yeast in your beer.

Back in the 90s I visited Freeminer Brewery and the owner went on a bit of a bizarre rant that people shouldn't drink with their eyes and that there was nothing wrong with cloudy beer. Seemed a touchy subject for him!
 
Used it for a copy of @David Heath s low abv IPA. Worked as per the recipe, came out under 1%. Decent beer too considering the low alcohol
I haven't heard of the Firm yeast but will look it up. Considering brewing the DH Low abv IPA, he recommends Windsor.
Can you give any more info than " Decent beer " , did you do a small batch as well?

Sure mate.
He recommends Windsor (amongst others). As it's maltotriose negative - my experience would suggest this one is too, although I can't confirm.
I scaled the recipe up to a full batch.
This tasting notes are pretty spot on. For a sub 1% beer it's respectable. It's better then nanny state to use a commercial comparison but keep your expectations in that kind of area and you won't be disappointed
 
Did you have a small grain bill to achieve a low ABV or did the Firm have very low attenuation?

Small ish. It's mashed high and uses a yeast that doesn't ferment maltotriose.

Check out David heaths video as he puts it better than me. He also provides a link to an article by lallemand which elaborates on brewing low abv beers
