Think some of the citrusy hops taste quite 'catty' if left too long in the boil. I find them used best in the last 15minutes onwards.
Think this is the most economical use anyway given citrus-esque hop prices (Much cheaper to use a high AA hop earlier in the boil) imo.
 
Just kegged my Simcoe/Mosaic NEIPA. I'm really happy with the flat sample I had. Will be able to report more when it's carbonated.

I love Mosaic but it see how it could be very marmite, it's not a classic ale sort of flavour. The thing is usually used quite heavily and as a dry hop, but when dialled back it can be more subtle but then it also loses the wow factor. The Mosaic from Hawks Head is an example of when it's less in your face but it only ends up decent and not amazing. I've never got cat **** from it though
 
Last beer I did was a pale ale with Mosaic and Eldorado. I did a hop stand with a 50/50 split and a dry hop of Eldorado.

Grain was 60% pilsner, 20% flaked oats, 10% flaked wheat, 10% flaked Barley.

I really enjoyed it and I would make it again. No cat like flavours going on, more pineapple/citrus
 
Another thing to watch out for is the FV temps. I'm about as new to brewing as the OP, but heard that significant temp deviation can create off flavours. I believe the same applies if it fluctuates too much during fermentation

Currently brewing a citra ipa - used magnum for bittering, then added citra in 5 min intervals for last 15 mins. Planning to Dry hop after 4 days with more citra & bravo

Not sure how those 3 will work together, but guess I will know in a few weeks 😉
 
Best beer I've made, or at least my personal favourite, was a two hearted clone single hopped with Centennial. Also had a session pale ale single hopped with Simcoe from a brewer I know who supplies a local pub and it is delicious - a simple beer but very moorish. No cat pee in the aroma or flavour as far as I can detect. I think like with malts its all a question of balance. Too much of anything and you upset the balance and the end result wont be 'optimal'.
