Hi all,

First time brewer here! Probably stupid but.. I've been looking at recipes on the forum and have a question regarding the malt ratio;

Some recipes quote quantities and percentage and some just percentage of malts used in a batch. Is there a base ratio for the amount of malt to be used in a batch? It seems that for a 40 pint batch you can use anything from 3 to 5 kg, is there a starting point or is it just trial and error? I've seen some great recipes on here but they just quote percentages and I wonder what the volume would therefor be for a 40 pint (or greater) batch.

See if I can explain and make sense, thats if I've understood the question correctly ......... :wha:


Say you use just 4 kg of Marris Otter for your brew and no other malt then the grist then would be 100% MO :thumb:

If you used 4 kg of Marris Otter and 25g of Chocolate Malt and 200g of Torrefied Wheat then the grist would be made up of

Marris Otter 94.12%
Chocolate Malt 1.18%
Torrefied Wheat 4.71%

If you use something like Brewmate software you just put in the weights of the malts etc and it tells you the percentages of each one which makes up the total grist.
If you look on The Malt Millers list of malts you'll see that some adjuncts are given an 'advisable percentage' to add to your brew eg 5 to 10 % of grist


I know what I mean, but don't know if I've explained it very well :hmm:
 
Download brewmate, its free and very useful. When you make your recipe in brewmate it will tell you your percentages for each ingredient if you put the weights in, then you can decide if that is too high a percentage for each malt. you can also put percentages in and it will tell you what weights to use if you want to scale up a recipe for example.

I understand the percentages relative to each other I guess what I'm after is let's say I'm doing 100 ltr of beer...typically how much malt would I expect to use? Approx 20kg say? That's the ration I'm after..I can then look at what different malts I can use to make up that 20kg. Apologies if i'm not making much sense...just a newbie :?
 
Is it as simple as you want to know how much grain to use , well that is all down to how strong you want it , but i can say i use 5kg per 23l brew and i get around 5% abv

Grain to Liquor ratio is the amount of mash liquor (water) you use in relation to the amount of grain you use. A typical ratio is 2.5:1 so 2.5L liquor to every 1kg of grain used, for example if you had a 5kg grain bill you would use 12.5L water (5 x 2.5), you can use different ratios to make your mash drier (stiffer) or wetter (looser) but 2.5L per 1kg is a good starting point.
