Some of my wines have had so much fruit in them they have the consistency of lava during primary fermentation.

These are the wines guests (and myself) tend to prefer,
Alcoholic water does not taste that nice in my opinion.
When I make apple WOWs for example i use practically no water,Just juice.
 
Very dry is very dry, even after a long conditioning period. I batch prime and bottle, so weighing out and adding the sucralose at that point is only a minor additional step.
I've just had a wee swig of mine out of the test tube and it's lovely, just a hint of dryness, it's down to 1.000 so not sure whether to keg it now after two weeks or wait longer, I cwint be looking to back sweeten for me, but will for the Mrs.
