Headspace

I have my first WOW that I think is just coming ready for racking and fining. However I made it in a 1 gallon demijon and I'll be transferring it into another one which, given the sediment, is probably going to leave a fair amount of headspace in the receiving jar.

From what I gather air = bad thing so should I do anything time time round (next time I'll make it in a 5l container!)

A lot of demis are very close to 5l anyway.
The stuff you leave behind when racking contains very little alcohol, so if you top up with boiled/bottled/trusted water, you should still end up with your intended ABV.
