Grain brew questions

I am returning to all grain. I do lager kits as a rule and obviously these are expected to be gassy ie secondary fermented! Now then! I have just put a Black Sheep bitter in there primed temporary homes! The wonder is that when I open them in a month or two I will have fizzy fizzy beer! I do like a head but really dont want a burpy beer! Is there any answers to this one? The other question relating to this is...Whats the best way to get the beer away from the sediment without disturbing it? Many thanks for any help. : :cheers: thumb:
 
When making ales I generally prime 23litres with approximately 85g sugar. This gives me a beer that is perfectly carbonated i.e not gassy yet gives a very tight head.

I guess that the answer then? Common sense really eh? I bottle mine so I suppose its a case of a little less sugar in the bottles? Thanks for that. :cheers:
