Boil times?

Evening all,

Spent the evening passivating my SS kettle tonight and using my paella ring it took 90 mins for 15gals to reach 62 degrees from 18 degrees starting temp.

I was only able to use the inner ring as the outer ring is the same diameter as my pot.

Does that seem about right? I have no intention of brewing 15gals and so imagine that a 5gal batch would reach temps much quicker but am wondering if a dedicated burner might be more efficient?

I think you will be there all night with a paella ring, and I doubt you will be able to maintain a rolling boil especially when dropping your wort chiller in etc, does it have a kw rating on it?

I would recommend get something with more umph.

It's rated 11.7kw but I can't use the outside ring so doubt it's even close.

I've taken heed of the advise and got myself an Anvil Forge burner, the 2nd version. First AG brew taking place this weekend.
 
Well, I never do a full boil. I always boil short, and then dilute to make up the volume in the FV.
I never worry about maintaining a rolling boil - I use a Buffalo boiler, unmodified, and "boil" the wort for an hour. There is an initial, very vigorous boil, after which the wort is very hot for most of the time, but only occasionally with significant boiling activity. I don't think that this causes any drop in quality (otherwise I wouldn't do it!!)
