most use wlp300 the weihenstephan strain but my favourite is def wlp380 , i do mine at 20c and get lovely clove , good banana and a hint of vanilla which is obvious when fermenting ( smells like ice cream ) , i do step mashes though which do have a flavour impact on what the yeast will produce ( imho ) providing you use german/belgian wheat malt as english is to modified to step mash ( under 60's C ) to make a difference and may infact harm your beer /wort .
