most use wlp300 the weihenstephan strain but my favourite is def wlp380 , i do mine at 20c and get lovely clove , good banana and a hint of vanilla which is obvious when fermenting ( smells like ice cream ) , i do step mashes though which do have a flavour impact on what the yeast will produce ( imho ) providing you use german/belgian wheat malt as english is to modified to step mash ( under 60's C ) to make a difference and may infact harm your beer /wort .

All bottled in 500ml's, 44 of the beauties!!
Tasting great! Dropped to a nice SG of 1012. Pretty much as anticipated.. That's about 4.9% ABV.. Lovely little spring session beer :cheers:

I will further update with a pic of the finished product ready to be :drink: hopefully!
 
Ok had a 'sample' this evening, its been in the bottle just over two weeks. I bottled three in clear bottles so that I could observe what was happening with the sediment.

First of the three bottles and as clear as a bell!

Quite a lot of carbonation and a nice bit of smoke considering its only been bottled for 2 weeks.. Gentle pour and swirled the last little bit round and poured it in (as the Germans do I believe??)

I have no average strength bottled beer left in my stock so I am keeping most of this lot for my camping trip in April. I also have a lovely Belgian Double going into bottles next weekend so they will be coming camping with me too... :drunk:
I still have 3 kegs to keep me going at home so happy days! :party:
 
looks good - very golden.

My dunkle wheat beer was bottled last week and like yours, completely clear. I'm surprised because most beers have the yeast suspended. I've twirled the yeast and have very little head retention. The yeast is too yeasty and it overpowers the flavour of cloves and bananas, though there's little enough of that. May be my fermentation temperatures. I hoped it'd come on some more with age, but no such luck.

Still, very drinkable and 1000% better than my kit based english wheatbeer (undrinkable)

It looks yellower on the photo than it does in the flesh to be honest. Well happy with the clarity of it. I will be carting these beers around with me on my trip so its a plus I can drink them cloudy as they will be by the time I get to where I'm going anyway!
Tastes nice though. Could quite easily drink a few of these in a session without a problem.. and still be able walk in a fairly straight line.... :drunk:
 
Slightly off topic, but where did you get your FVs? Really liking the look of those!

Brewed a similar wheat beer last year, very clovey indeed.
 
It came with the coopers DIY kit I bought when I first started home brew. It's a great FV and I still always use it when I'm bottling beer. You can buy them separately also.
