so if i was to make a 28L Mashtun, is that capable of 10Gal brews with an ABV of approx 4.5-5%, or is there space in there to go slightly stronger?

Yes MrF, provided your boiler is big enough, my 70L stainless steel can do that. Beware that is 70L to the BRIM I can only safely boil about 65L.
