    They are damned good.! mmmm hops! We are nuts for hops in the US homebrewing community, that's for sure The Most hops I personally have ever used in a single 20L batch was 11.5 oz and it was Goood. I have a freind who brewed a batch with 2 lbs of hops.

    any of the German or Continental Noble hops would be ideal as aroma hops in a lager Northern brewer should make an adequate bittering (kettle) hop , I personally like the Saaz, and Hallertauer hops best for Pilsner type lagers.     Very High Alcohol Stout Yeast

    US-05 dry yeast should get there just fine, I have used it to get an IIPA up to 15% abv in the past. Make sure to pitch enough though, at that starting gravity 3 11gr sachets should do it.

    LOL Only real reason to try to find Irish hops is sentimentality really, I am 3/4 of Irish heritage, so I thought what the heck, might as well ask. Heck the State I reside in is Washington, there a 10's of thousands of acres of hops withing 200 miles of me, and i grow my own as well.

    I live in eastern Washington State in the US, I have 3 varieties of hops growing Glacier - is up about 1 foot and in need of pruning Willamette, is up about 8 inches, and is really really in need of pruning as it has about 25 shoots Sterling - is just now breaking through the mulch

    I suspected as much on the mold issue, thanks for the reply I too grow some of my own hops, and live very close to one of the worlds most prolific hops growing areas, so availability is not difficult part of my curiosity is my largely irish heritage, some of which originates in Cork.
