    The higher your mash temp the higher the gravity will finish and hence leave more sweetness. I did a chocolate vanilla stout and mashed at 69 and its turned out really well.

    I would go with s-04 yeast as US-05 will leave it pretty dry. You want some residual sweetness to complement the chocolate & orange. You want a high mash temp of at least 68 too!

    Wine needs to finish nearer to 1.000, maybe even lower like 0.990. I would leave it at least 14 days in the FV, maybe even longer!

    Almost certainly be 5/16". Reducers are readily available!

    i have 2x 3/8" and 2x 5/16" you can get them in most sizes tbh and you can always use reducers if theyre not the correct ones
