    Eliminating Syrup Smell from Cornies

    Check all the seals and plastic bits and replace if any smell like the syrup. Rubber and plastic can absorb odours, stainless cannot. Have you tried disassembling the in/out post and thoroughly cleaning them?

    Well, the Wyeast 1007 German Ale is fermenting away already, kicked off early this morning! The odour accompanying the escape of CO2 from the airlock is a bit unique.. rotten eggs and exotic fruit... :D

    Schneider Weiss is good mass produced Weissbier. Franziskaner is good too. Never in a can though! Hofmühl in Eichstät make a great Weissbier and Dunkles Weiss. As well as Guttmann in Itting for their Weissbier.

    I can second Weyermann Pale Wheat Malt for a traditional Weissbier. Dark wheat malt can be used in a Dunkles Weissbier, but not as a main ingredient in a normal weissbier.

    Just ordered my DE razor

    Make sure you sanitise it if it's been used ;) I bought a Merkur with a badger brush and a few sets of Merkur blades. Cost a small ransom, but I enjoy using it!

    Surely some pubs etc use instant mashed 'taters ? Personally I boil very starchy potatoes (never waxy) and a mash them to bits to get it smooth, then a whisk to make them silken..

    Looks like it could be a nice beer! Only change I would personally make is if you're going for a "true to style" Weissbier it normally does not have any flavour / aroma hops, only bittering, and not tons of that either (+/- 18 IBUs of a noble German hop).

    Sterilisation

    My sanitation schedule includes: A rinse after each use. A two hour soak in bleach solution (cold water) before draining and putting into crates. And on bottling day: rinse and soak bottle tree and bottles in Oxi Clean solution (warm water). Never an infection yet.
