I thought about that but decided that sterilising it could be problematical. That and if its in the brew you have to take the wire out meaning it needs to be sealed. These days i use heat mats for big brews - i have a couple of reptile heat mats (cheap of ebay) and a temperature...
Its only been stored about 2 weeks but was drinkable immediately. It has a somewhat more delicate taste than the sauv blanc in my opinion but i wait to see what her indoors thinks of it, will probably open a few at xmas.
It looks perhaps a little dark but as her indoors said when i did this kit "it looks like someone has peed in the bottle" :-?
The pinot version is somewhat lighter (just finished one myself) but as long as the sauv blanc tastes ok i wouldn't worry about it.
Funny thing i have made a lot of wow's but never tried a simple apple wine, think i will give it a go after seeing this. Did you use a standard demijohn and top up with water - after the initial excitable fermentation obviously ?

Malic acid is naturally found in apples which is why it tends to be used in turbo ciders which may lack acidity as the juice is generally made from desert apples. Try this supplier...
I only use the standard buckets for racking and clearing these days because as you say quite often they dont seal well so you dont see airlock bubbles.
I switched tot he barrel type for fermenting and find them to be much better.
