Hi all. About to knock up a Black Rock Cider kit and on the instructions it states, "Dissolve contents of can and 1kg of brewing sugar in two litres of hot water". When I brew ale it always states to use boiling water, weather it's Woodford Wherry, Bulldog brews such as Evil Cat Imperial Red, Evil Dog, etc. So for cider is this term "hot" a specific temperature? Thanks in advance.
 
On cider kits I use cold water from the tap give it a good stir and let it get on with it, never had a problem yet.
 
A wine kit i make regularly tells you to add the sugar and juice to 5 litres of hot water (53c max) i have always assumed it is to help dissolve the sugar and also so the temperature is close to pitching temperature when you add the cold water to bring it to 22.7 litres.

2.Pour in 5 litres of hot water maximum 53c.

3. Pour in 4Kg of sugar.

4. Pour in the contents of the concentrate bottle.

5. Top the FV up to 22.7 litres.
