    That looks like a nice strong bitter. A lot of times people really pile on the specialty malts/crystal malt on a strong bitter, but I think you'll have a nice moderate malty profile. Good luck!

    Big and Malty - feedback please

    Thanks for the advice. Mash temp was actually the thing I wanted feedback on the most. I usually mash lighter beers ~67-68c because I like the maltiness, but I wondered if someone might say to mash lower on this one due to the high gravity. Thanks for the confirmation.

    s-04 is a great yeast for ales. I always associate the flavor profile with bitters, though, and so it tastes a little weird in a cider, to me. That's pretty subjective, I know, but I can't avoid it. I've also used white labs 775 English Cider Yeast and it was very good--does what it says...

    US-05 Yeast

    I use s-05 a lot and, as stated above, it almost always loses its krausen after a couple weeks. Sometimes it's still fairly cloudy, though. Just the nature of the strain, I think. I've heard people say that the dry variety is an even higher attenuater than the liquid version of this strain...

    Can't comment on the rest of the questions, but as for yeast, I'd go for the cider yeast. S-04 will work well too, but Young's would be my first choice. Just my 2 cents. Good luck!

    DP recipes

    It also causes temporary impotence. I've heard it was given to sailors so that on leave in a port they wouldn't be able to, you know, stand at attention. Edit: okay...just had a search on the web and apparently the impotence thing is a sham. Don't ever listen to me. :oops:
