Hi

I am new to this brewing malarkey and was planning a 46l extract brew of directors bitter clone. I have this recipe which i have sized up to 46l.

Fermentable
Malt Extract Syrup Pale 5400 grams 75.8%
Crystal Malt 700 grams 6.5%
Black Malt 60 grams 0.6%
Sugar, Household White 980 grams 17.2%


Hop Variety
Target Whole 11.4 % 90 mins 50 grams 64.1%
Styrian Goldings Whole 4.5 % 15 mins 18 grams 23.1%
Hallertauer Mittlefruh Whole 4.3 % 15 mins 10 grams 12.8%


For some strange reason I seem to adversed to using white sugar. Can I increase the malt extract to compensate or use something else like cane sugar.

If you up the malt syrup, you'll get a bit more body and flavor. That's not a bad thing, but if you want to keep it lighter, substituting cane sugar would be fine. If it were mine, I'd replace half of the white sugar with cane sugar, the other half with malt syrup:

5900g malt syrup
700g crystal
500g cane sugar
60g black malt

Either way, it will turn out fine, I'd imagine.

Cheers I will do. I will try to get one in next week. I work for my self and things are a bit quiet and I have plenty of space at work at and my "brewery" is nearly ready so no excuses really.
