My keezer is in my kitchen (where the zonal thermostat is so good room temp).

I've had the temp controller maybe ten years. I used to have the probe dangling in some starsan but over time it became submerged for periods. Not sure of their IP rating but probably not designed as such.

After the first incident (a small keg was frozen solid, rest were kind of slush) I adjusted the calibration and changed the probe to read from a gel pack instead of liquid. Was doing ok until this morning.
