Brewed a Hoppy American Amber today.

Grist of MO, Red X, Red Rye Crystal, Light Crystal and a bit of Sinamar for colour.

Bittered with Pacific Sunrise, Cascade pellets at 15 and Whirlpool, Chinook & Centennial Incognito in wp. Will dry hop with Cascade Spectrum.

Yeast is WLP041.

The aroma off the Incognito was incredible, but it's such a PITA to clean.

The colour looks great. I’m over due an American Amber brew, and a lot of US Hops moved house with me. Just need to to get the garage sorted so I can get a brew on.
 
Today's brew is an English Porter.

Targets are:
OG: 1.048
FG: 1.011
ABV: 4.9%
EBC: 47
IBU: 27

Grist may be a bit too "busy", but it's a user-upper of sorts.

75.7% MO
10% Brown
4.4% Choc
4.4% Dark Crystal
3.3% Pale Choc
2.2% Caramalt

10g Admiral @ 60
20g Bramling Cross @ 30
20g Bramling Cross @ 10
20g Bramling Cross @ Whirlpool

Yeast is a pack of CML Beóir and half a pack of CML Clipper.

75 minute mash @ 66°.

Hoping the Dark Crystal and Bramling Cross provide some dark fruit notes.

20l batch - half will be going into keg (maybe on mixed gas, but yet to decide), and half will be going into a polypin for my neglected beer engine.

Ended up with 20l at 1.050.

Today I brewed a Märzen. A few days early so maybe a Februarzen.

DIY Recipe Kit from GEB. Light Munich, Vienna, Lager, Dark Munich, and a touch of Crystal. Hopped with Challenger FWH, and fermented with The Yeast Bay Franconian Dark Lager (made a starter with some slurry when I kegged that at the weekend)

Did a Hochkurz mash with a single decoction, which always seems to improve efficiency, so ended up 2 points up at 1.058.

Will ferment low and slow at 10°c before ramping and spunding.

Pleased with the colour and flavour at this stage.

Also kegged the Porter, which I'm keg conditioning with dextrose and will transfer half to a polypin.
 
After watching The Craft Beer Channel's recent 3 part series on cask, I want to brew something to get use out of my Pint365. So am planning a Best Bitter on Monday.

This isn't a clone, but definitely a homage to Harvey's Sussex Best. I've added some Imperial to the grist, upped the gravity, changed the Crystal to the last bits I have in stock, and am swapping the late Fuggles/Goldings for Sussex (I did want some Hampton Fuggles, but can't seem to find them in homebrew packs this year).

Have bought some Brewlabs Sussex Ale which I'll prop up tomorrow. I may add a couple of grams of something a bit phenolic.

Will open ferment and top crop (for use in a Golden Ale probably).

Hookwood Best Bitter

OG - 1.043
FG - 1.011
ABV - 4.3%
EBC - 20.5
IBU - 33

Grist - 84% MO, 5.2% Flaked Maize, 4.2% DRC, 4.2% Imperial, 2.4% Med Crystal.

Hops - Progress @ 60 for 22 IBU, Bramling Cross @ 15 for 9 IBU, 30g Sussex @ Whirlpool.

Water - I've found the alleged Harvey's profile, so using that. Mix of Surrey tap and RO.

Yeast - Brewlabs Sussex Ale slant.
