Perhaps Tony, but you also come up with the goods. :thumb:
Too true Jim, I can honestly say I owe a lot of my brewing knowledge from him :thumb:

Aleman, I apologise for the quick reply after your detailed response, but I'm at work now anyway and shouldn't be on forum at all...

I'll reply in full later, but in the mean time are you able to recommend a suitabel yeast for a wheat beer? Sorry for being lazy, I would look myself but i'm in a rush, at work, and was planning on getting the gear at lunch time.

Haven't even decided what kit i want, except that i want a wheat beer.

Well You could be looking at the Brewferm Blanche, Or the Lallemand Munich Or the Safbrew WB-06 . . . Any of these will do very well in a wheat beer . . . I've experience of the Blanche, and thought it a bit bland so would be looking at probably the WB-06 or Munich the next time I made a Wheat beer with dried yeast.

Aleman, is there anything you don't know on home brewing?!
I started brewing around 1980, before the internet had escaped from CERN, and studied for my first degree in biology, which was followed by my second in Biochemistry and plant physiology. This was where I really got the bug for brewing, and among several of my early jobs was three years spent working for one of the biggest regional brewers in the north west, where I had access to a good lab, the brewing library, and the IBD journals.
And this is also the reason that I come across as a big headed, arrogant, know it all, arsehole as well

  It can be said of some tony, but you always come over as a very patient, helpfull member of the forum (and other forums) to me matey! :thumb: After a couple of threads from a&$e holes on 'the other' forum, it's nice to read a thread such as this! :D

Aleman

Sorry i had to rush a reply yesterday, which didn't really do justice to your help.

I didn't buy any extra yeast yesterday as the kti i bought contained the Brewferm Blanche yeast with it, in a 12g (i think) packet. My only concern was your comment that it should be stored in the freezer, which clearly the kits aren't in the shop. Even the dried packet yeasts were on the counter, not in the shop.

The kit i bought was BruPaks West Riding Wheat, which at £25.01 is surely the most expensive kit on the market! However, it was the only 2-can kit in the shop for wheat beer, so i went with it. I know you said you thought the yeast was a bit bland, but after spending that much on a kit (as well as buying another fermentation bucket and a new hydrometer - re other threads in which you have replied to my questions) I didn't want to pay an extra £2.50 for the yeast when i already had a brand one.

Thanks a bunch for your help this week. I've printed a couple of your responses for future reference The next kit I do, i want to find something that is quite light and damned hoppy. I might even investigate dry hopping (depending how much they cost - I'm skint at the moment), which is another subject i know nowt about.

No idea what kit is best for this type of beer, but I'll luck into it, but I'll definitely spend extra and get the yeast you mentioned - US05 (unless you have a better idea)

 The more I know about brewing . . . the more I realise there is to know. ;)

Socrates - modified for the modern home brewer - I like it!

Another good yeast is US05 which is superb in hoppy pale ales, bringing hops to the fore but can also be considered one dimensional in that respect, it also has the habit of sitting on the surface of the wort and laughing at you trying to get it to clear.

Aleman, (or anyone else) what do you mean by "sitting on the surface"?

I've had my brew on the go for 9 days now. checked SG today, was 1.016. There was yeast on the top of the brew, is that what you refer to? Is this bad? Do I have to wait for it to sink?

Sorry if this is a stupid question, just trying to understand what I'm doing.

Cheers in advance.
