Hi all,

I bought a muntons kit of yorkshire bitter and yesterday I made the primming. I never taste a yorkshire bitter before so I give a try to feel what's like my beer will be on 2 weeks after bottled.
I'm worried about my beer because it smells and taste a bit of vinegar, I want to know if this bit of vinegar taste is expected from yorkshire bitter, or if it's because I used only 18L on a kit to make 23L of beer, or the sad answer: infection!

Thanks from a beginner homebrewer!

Bitter shouldn't taste like vinegar. However young beer can often be a bit sour or "green" so you may well find that in a month or so it is fine. You can also get sour and other off kinds of smells from normal fermentation. So don't panic. You might have an infection but then again you might well not. Brewing is a pretty robust process. Don't go doing anything crazy like throwing your beer out just yet :)

Since you have made your beer with less water you will probably find that it will benefit from a longer maturation period, since it will be stronger and more hoppy than the manufacturer intended. A rough guide is 1 week for every 10 points of gravity, so a beer with an original gravity (OG) of 1040 should have at least 4 weeks maturation in a cool environment (mine goes in the cellar). Note that this is after your initial fermentation and the week or somewhere warmish (around room temperature) for priming.

Everything is unfamiliar and therefore worrying first time out. I had the almighty fear that something was going wrong when I did my first kit but it was fine :)

Hope that helps and welcome to the hobby

Thanks for the answer!
I'll try to follow your advices and I hope I'm going to drink a beer instead vinegar! :D It gave me another shot of enthusiasm!

When finished I'll post a photo of my first beer.

Thanks, thanks!

i've got a muntons yorkshire bitter kit that i bottled about a week or so ago, and it did smell a bit vinegary when it was in the fv but decided to bottle anyway, had a sample while bottling and tasted lovely and in the smaller quantity in the trail jar it had lost the vinegary smell aswell.
