Ive heard that this yeast strain is the doggies danglies. Has anyone used it? what do you need to do to get the best out of this yeast? does it respond well to chilling to drop it out, does it need a boat load of finings etc?
 
I've started using it recently and agree its a lovely yeast :thumb: ( the stout I made with it is especially good )

With all things good come the down sides though.. :nah:

- I find it ferments BIG - It has left my FV each time fermenting 55 litres with around 15 - 20 litres headspace @ 19c :shock: so use a blow off tube, or even better would be to top crop it and brew again :thumb: ( I think I'll do this next time )

- It is a bugger to settle, Aleman and Malt Miller have both said Isinglass will drop it though. I crash cooled mine and added gelatine when putting in the keg - it's not bad ( I have seen worse in a pub ) but I am used to getting my beers crystal clear. The stout of course is no problem on this front :whistle: I will get some Isinglass for lighter beers and try that I think

Despite these I will use it again I am sure - I have a bottle kept back to grow up in the new year :thumb:
 
Everything Hawks said is true, Cracking ale yeast, I love it.

Of course the downside is that as a top cropper it does not want to settle at all . . . Crash chilling helps a lot, and then isinglass . . . no need to use a boat load. just a 'normal' amount . . I use Allkleer C from Murphys . . . I believe murphys homebrew have the Allkleer A (diluted C ;) ) for sale.

In the 'ideal world' you would run a finings dosage test to determine the optimum dosage for each batch of beer, but I normally find 100ml (AllKleer C diluted 1 in 3 ) good enough for 70-80L
 
I wouldn't use it for a blonde ale or hop driven pale but excellent character when used in maltier beers.
 
I currently use Thwaites yeast for most stuff. It drops like a stone if chilled and is ace for bottling. It does subdue hops a bit and is not as flexible as WLP002 so was looking for an alternative
