No brewing today, but on a coffee break half-way through bottling another batch of Fisherman's Stout. I ended up leaving this batch in the bucket for longer than I intended; I usally brew in the bucket for four or five days, then rack into demi-johns, but this one ended up 10 days in the bucket, so just 3 days in demi-johns, bring it up to 13 days total, which is about right. FG 1011, which should give an ABV of 4.3%, about what I'm aiming for.

Alastair, did they use Simcoe? The GH recipe uses mount hood. I thought I read right through that thread I must have missed that post.
I can’t remember exactly, I’d posted from work and from memory and have just made the commute home.
The take home from that brew was that the beers fared much better than most people expected, and a decent bit of fizz helped it shine.
 
Carrying on from my post 5,543 both the main batch of the Guinness clone and the sour batch has finished fermenting. Now I have to sterilize the sour and add it to the main batch without adding any oxygen.
The sour smells like a mix of Guinness and Bovril but tastes fine.

After mixing the two very happy with the result, just the right amount of the sour taste coming through.

I seem to struggle getting fizz into beer, as I bottle and am afraid of creating bombs, any suggestions?

I batch prime to around 2.5 vols when bottling and have gone as high as 3 for the odd Hefe. Both PET and glass can handle that easily.
I’ve had gushers, probably due to a contaminated bottle here or there, but never any bombs.
PET in particular is very safe as the it doesn’t run the risk of picking up micro cracks over time.
 
I brewed the John Finch Hefe Weiss AG kit (Erdinger Clone) from the Malt Miller, today.

All went swimmingly, except I ended up with an extra litre or so of wort for some reason and, as expected, a slightly lower OG at 1.039 - so I think I'll struggle to get more than 3.8% when all is said and done. I've pitched the yeast and, after agonising over what temperature to ferment at (cold for cloves or warm for bananas), I split it down the middle and went for 21C.

I wonder if I could maybe have benefited from the micro pipework for the G30 because of the relatively small grain bill?

Oh, and no OG photo because, of course, I smashed the hydrometer. I think I should just add one to every order. Or maybe just get a refractometer!

I was reading about how they do this and thought it sounded interesting I am curious to hear about your results.

The last time I smashed mine I thought I'd be clever and ordered 2...only for one of them to arrive broken 😂😂
 
Yesterday I brewed a Mosaic & Citra IPA, slightly stronger and higher EBC than the APA's I've been making recently.
A bit of a user upper with malts.

18L
Total 24.25L water (BIAB no sparge)
OG 1.059

350gm Caramalt
200gm extra pale pilsener
200gm Vienna
150gm dark crystal

10gm Mosaic 60mins

35gm Mosaic dry hop

Started late in the day so let it chill down in brewfridge overnight and pitched yeast this morning, using Lalbrew Verdant IPA for first time.
Volume up, OG down 3 points. No bad thing if it turns out slightly lower ABV, though last few batches attenuation has been over the predicted.

Now have some elderflower wine to bottle though have been toying with idea of putting some in a mini keg.

As far as I can tell, all the micro pipework does is make the overflow inlet lower. Liquor shouldn't go back down the overflow under normal circumstances anyway (I turn the red valve down if it does).

As for the refractometer, they are less accurate than a hydrometer. I have one as well as the hydrometer, but don't rely on it. Maybe buy a second hydrometer on your next purchase so you have a spare ? Murphy's law would dictate if you buy a spare, you'll never need it and hopefully it'll stop you breaking them!
 
Father's Day brew. A recipe based closely on Jon Finch's Hefeweiss AG kit from the Malt Miller. I tweaked the recipe to give me 20L but my efficiency was better than usual, possibly because my Klarstein can sometimes overshoot the target mash temperature. Anyway, ended up with 23L at the target 1.045.

It's the clearest wort I've ever had too, maybe down to me recirculating every 5 or 10 minutes using my 2L jug. Note to self - buy a pump.

Looking forward to this one, as the last time I brewed it, it was delicious. Using CML Kristallweizen for the first time.
 
A very pleasant session IPA from @Alastair70 coming in at 4.2%. can't say I am a big fan of session IPAs but this is a very nice beer. Certainly a lot better than most of the shop bought session's I have tried. I've been informed of the inspiration behind this but don't think I have tried the original. But it has been a while since I had a beer from that particular brewery. After a night on the Beamish and Guinness (Beamish is better), it's a refreshing pick-me-up.
